Cashew Treats

An upmarket alternative to salted peanuts!

Ingredients

4 handfuls of cashew nuts (about 4 oz)
2 tbsp olive oil
pinch of salt
1 clove garlic

 

Method

Spread the nuts in a grill pan, drizzle with the olive oil and sprinkle with a pinch of salt. Grill for 5 mins or so, tossing occasionally and making sure that the nuts don't burn. They are ready when they are golden brown.

Allow to cool, then serve in a bowl rubbed with the garlic (cut the garlic in half and rub the cut sides around the bowl.) Yum!
