| Ingredients
1 small white cabbage, grated
2 carrots, grated
2 spring onions, finely sliced
2 to 3 tbsp vegan mayonnaise (e.g. Plamil)
Freshly ground black pepper

Method
Mix the ingredients thoroughly. Yummy!
Notes
For variation, add a handful of salted peanuts and a few sultanas. If
you don't have any vegan mayo, then try using a vinaigrette
dressing instead - it gives a lovely fresh result. |
