2 tins white beans (e.g. butterbeans)
juice of half a lemon
1 clove of garlic
1 tablespoon of olive oil
salt and pepper to taste |

Method
Whizz the ingredients in a food processor, adding a splash of water to
make a creamy consistency, then heat gently in a saucepan for 10 minutes.
Serve with lightly steamed vegetables and potato skins. Delicious! |
