| Ingredients
2 tbsp olive oil
1 onion, diced
1 clove garlic, crushed
1 lb tomatoes, diced
150ml vegetable stock
2 tsp tomato puree
1 bay leaf
10 pitted black olives, sliced into rings

Method
Heat the olive oil in a pan. Add the onion and fry for 5 minutes. Add
the garlic, tomatoes, stock, tomato puree and bay leaf. Simmer for 20
minutes, stirring occasionally.
Meanwhile, cook some pasta following the instructions on the packet.
Cool the tomato mixture slightly and remove the bay leaf, then whizz
in a blender or rub through a sieve. Reheat gently in a pan and add 10
pitted black olives, sliced into rings. |
