Red Cabbage (Danish Style)
This is a lovely way to eat cabbage, especially as part of a vegan roast dinner. It needs to cook for quite a while, but is well worth the wait.
2 oz vegan margarine
Melt the margarine in a pan. Add the cabbage, apples, vinegar and water and stir well. Cook gently for about 1½ hours (until very tender), stirring occasionally.
Add the sugar and the redcurrant jelly to taste (the cabbage should taste 'sweet and sour'). That's it! Delicious.
