Rice Salad

This is a great way of using up left-over rice, and makes an interesting lunch to take to the office.

Ingredients

cooked rice
¼ - ½ red pepper, diced
1" cucumber, diced
1 - 2 spring onions, finely chopped
4 or 5 cherry tomatoes, halved
handful salted peanuts
slug of olive oil
dash of white wine or cider vinegar

 

Method

Mix all the ingredients together. Season to taste. That's it!

Notes

You can vary the amounts depending on how much rice you have.
